Delicious Vegan Chili Recipe

Who said you need meat to make mean chili? I have the perfect vegan chili recipe … which utilizes NO meat but packs a mouthful of flavour!

This recipe comes straight from my Vegetarian and Vegan meal plan! It is a classic! My vegan chili is easy to make and HIGHLY nutritious!

Ingredients

The list below may seem daunting but it isn’t! It just takes one quick shopping trip to gather everything.

• 2 tablespoons olive oil
• 1 large onion, medium diced
• 2 garlic clove, minced
• 1 small red chili pepper, seeded and small diced
• 2 large carrot, peeled and small diced
• 2 large celery stalk, medium diced
• 1 zucchini medium dice
• 1 /2 cup corn (non-gmo)
• 1 small yellow bell pepper, seeded and medium dice
• 1 small red bell pepper, seeded and medium dice
• 6 medium size ripe tomatoes, medium diced
• 8 oz cooked kidney or black beans
• 5 cups baby spinach
• 1/2 tsp ground cumin
• 1/2 tsp ground turmeric
• Black pepper (to taste)
• Sea salt (to taste)
• 1 tbsp kelp or dulse flakes (great addition for vegan and vegetarian as it contain Iron!!!)
• Cilantro to garnish

Directions

  1. Place a large saute pan over medium high heat, then drizzle with the oil.
  2. Add the onion, garlic, and red chili and sauté for 2 minutes, or until tender.
  3. Sprinkle cumin, turmeric and kelp flakes over the onion mix and stir well, then add the carrot, celery, zucchini, corn and bell pepper, and cook for 5 minutes, stirring occasionally, or until the vegetables begin to get tender.
  4. Add the tomatoes and the beans and cook until soft, stirring occasionally, or until the tomatoes have broken down and most of the liquid has evaporated creating a sauce.
  5. Stir in the spinach and remove from the heat. Season the chili to taste with freshly ground black pepper and sea salt.
  6. Spoon the chili into serving dishes – garnish with cilantro and serve!
