Delicious Vegan Chili Recipe
Who said you need meat to make mean chili? I have the perfect vegan chili recipe … which utilizes NO meat but packs a mouthful of flavour!
This recipe comes straight from my Vegetarian and Vegan meal plan! It is a classic! My vegan chili is easy to make and HIGHLY nutritious!

Ingredients
The list below may seem daunting but it isn’t! It just takes one quick shopping trip to gather everything.
• 2 tablespoons olive oil
• 1 large onion, medium diced
• 2 garlic clove, minced
• 1 small red chili pepper, seeded and small diced
• 2 large carrot, peeled and small diced
• 2 large celery stalk, medium diced
• 1 zucchini medium dice
• 1 /2 cup corn (non-gmo)
• 1 small yellow bell pepper, seeded and medium dice
• 1 small red bell pepper, seeded and medium dice
• 6 medium size ripe tomatoes, medium diced
• 8 oz cooked kidney or black beans
• 5 cups baby spinach
• 1/2 tsp ground cumin
• 1/2 tsp ground turmeric
• Black pepper (to taste)
• Sea salt (to taste)
• 1 tbsp kelp or dulse flakes (great addition for vegan and vegetarian as it contain Iron!!!)
• Cilantro to garnish
Directions
- Place a large saute pan over medium high heat, then drizzle with the oil.
- Add the onion, garlic, and red chili and sauté for 2 minutes, or until tender.
- Sprinkle cumin, turmeric and kelp flakes over the onion mix and stir well, then add the carrot, celery, zucchini, corn and bell pepper, and cook for 5 minutes, stirring occasionally, or until the vegetables begin to get tender.
- Add the tomatoes and the beans and cook until soft, stirring occasionally, or until the tomatoes have broken down and most of the liquid has evaporated creating a sauce.
- Stir in the spinach and remove from the heat. Season the chili to taste with freshly ground black pepper and sea salt.
- Spoon the chili into serving dishes – garnish with cilantro and serve!
